Cheesy spiced ham & mushroom omelet that will hit the spot for a weekend breakfast. Light and fluffy eggs filled with diced ham, diced jalapenos, sauteed mushrooms, and smothered with cheddar jack cheese.

Ingredients

  • 6 large eggs

  • 3/4 cup diced ham

  • 1 cup sauteed mushrooms

  • 1/4 cup milk

  • 1 tablespoon diced or sliced jalapenos

  • 1 cup shredded cheddar jack cheese

Directions

  • Saute your mushrooms in a little bit of butter and set aside.
  • In a large bowl, whisk your eggs together for about 2 minutes.
  • Now stir your mushrooms, ham, and jalapenos into the bowl of eggs.
  • Add 2 tablespoons of cooking oil to a medium sized skillet and heat to medium low.
  • Add your egg mixture to the skillet and add a little salt and black pepper.
  • Do not stir the mixture once you pour it in the skillet..
  • Now cover your skillet with a lid and turn the burner down to low on the #2 setting.
  • Let it cook for 12 minutes and then add the shredded cheese on top.
  • Allow it to cook for another 5 to 8 minutes, then turn it off and let it sit for 5 more minutes.
  • That’s it. Cut it into fourths and serve with a side of oatmeal, fruit or a biscuit.

Notes

  • If you do not like jalapenos, you can substitute them with your favorite type of veggie, pepper, or onions.
