Ingredients
1 1/2 cups jasmine rice or whatever rice you have
3 1/4 cups water
1 lb shredded or canned chunk chicken
1 lb chopped broccoli
2 cups diced green bell peppers
1 lb shredded cheese ( optional )
1 tspn minced or fresh diced garlic
1 tspn italian seasoning
1 tspn ground black pepper
1/2 tspn salt
Directions
- Chop your broccoli and bell peppers.
- In a large bowl, mix all of your ingredients together, except the shredded cheese.
- Preheat your oven to 350 degrees and spray your casserole dish with nonstick cooking spray.
- Pour the entire mixture into your sprayed casserole dish.
- Cover your casserole dish with aluminum foil and bake for 30 minutes.
- Remove your dish from the oven and uncover the foil.
- Now cover the top of the dish with your shredded cheese and bake uncovered for 10 minutes or until the cheese is melted.
- Remove from oven and let cool for 10 minutes, this way everything stays together when you scoop it into your bowls.
Notes
- For a healthier vegan option, you can omit the chicken and add more of your favorite veggies. To still get the same taste, you can try adding a couple of chicken bouillon cubes to your mixture just for flavor.
